Organic materials also need air and moisture to break down properly. Buried under a pile of garbage to then be covered by clay does nothing.
How much water you need to throw at the compose? And how long does it take for it to break down? A week, 2 weeks?
We are ultra dry here. Unless we want to use water from river to break down organic garbage, composing is a waste of and resources. Leaving it above or below ground make very little difference.
