Actually I went to Western but yeah, same kinda thing. What you have there looks pretty good, just break up the paragraphs a bit. Try this format:
Dear parents,
The students in _______'s Social Studies 10 class will be going on a trip to Edmonton from *insert date here* to *insert date here*.
We will leave the school at approximately 5:00 PM and make it to edmonton at approximately 8:00 PM and going right to the best western hotel at *insert adress here*
Our itinerary for Saturday will include a trip to the Alberta Legislature to meet with *name politican or tour guide* to talk to him/her so that the students can increase their learning about how the provincial government works.
We will be spending most of the morning and early afternoon there before going to West Edmonton Mall where the students will have the option of shopping, swimming or going to the amusement parks.
We will be leaving Edmonton at approximately 10:00 AM Sunday and are expected to be back at the school around 1:00 PM.
Please complete the below information to allow your son/daughter to come with our class. Please be sure to check the additional box to give them permission to swim while at the mall. (there must always be permission to swim, it's a totally different permission thing) Keep the above information for your own knowledge.

Then make up some crap permission thing at the bottom in a special "tear off" area. (so that parents can keep the itinerary)

There, if that doesn't work, then you're screwed. I used to have to make these permission forms as captain of my cheerleading squad for all our competitions, shows and outings. Never once had a problem with authorities.
