I'm bringing in 2 fenders and a headlamp from some guy in Sask... Wondering what the cheapest way to do this is? And best way to pay the guy so that he doesn't walk away with my money...

Fenders are pretty large. You will be better off shipping them with a freight company like Quick-X or Rainbow Transport & not a courier.
