I really want to get a nice set of Chef Knives and was told that the Wüsthof Grand Prix II series are hands down the best knives for your money.

I found this site that seems to have really good prices. http://www.cutleryandmore.com/details.asp?SKU=9723&view=a

Anybody know much about knives?

I'm not too familiar with that brand but I'm in the cooking field and Vietnamese    and I love my JA Henkel 5 stars, mine was a 6 piece set and cost $800 and only included a chefs knife, a pairing knife, a fileting/boning knife, slicing knife, carving fork and a sharpening steel..but after years of use, they're still sharp as shit

Another brand of knives you should check out are Global

ok there is a place in kensington..

if you are coming across the bridge from downtown, turn left onto kensington road, the store is on the right hand side of the first block..

not sure what it's called, but you will see dishes and furniture in their window..

it's a very high end furniture/designer dish/knife store, walk to the back of the lower level and they have a display case with J.A. Henckles, and my new personal favorite Global japanese made knives.

they have a ton of other brands too..

Yeh I've seen the JA Henckels at the Bay, for $795.00

You got more then 3 knives though.

You can get an 18piece of JA Henckels on this site for $499.00

lol I didn't even read dj rice's post.

I have a good set of henckles too, they are great.

my parents got a set as a wedding gift, 26 years ago, and they are still holding up.

beware, there are different qualities of henckles knives.

some are way sturdier (and more expensive), some have composite handles, some are wood.

you can buy a basic set at sears for 200 bucks, which includes like 5 knives and a block.

but the higher end models can go for 200+ per knife

Its basically up 2 you....whatever your personal preference is, I bought mine 6 years ago, and also with the JA Henkels you can get a even lower grade 4 star, which is a cheaper knife but still good quality...what I recommend is going to a knife shop, and asking if you can hold and see how you like the weight of the knife and all that, and see if its usable by your standards

There was one company when I was still in school that I really liked, but cant rmemeber the name..the company logo was like a pitchfork, those were even more expensive than my JA Henkels..

i would suggest going to a nice knife shop (you can find one in most malls) and just trying out various brands to see which is balanced best, etc. the grand prix IIs are nice, but you may find that you like something else better. the german knives like wusthoff and henckels are good, but recently there are japanese knives and ceramic blades have been becoming more popular.

I saw this beautiful set of knives by some Japanese brand at Williams-Sonoma, very high carbon content and even had the folded forged design, but are not very practical for home use, as they are very high maintenance.

Wusthof Dreizackwerk is the brand you are thinking of (i think). I have a set of the classicas and I really like them, really nicely weighted.

oh and it's not a pitchfork, it's trident

If you order online (which is a good idea to save $$), try to find out what knives you like best. Everyone likes different feels.

I know that costco occasionally has knife sets around a few hundred bucks, so they are probably mid-grade. I believe those are Henkels too but I'm not sure. I have one Henkel chef knife which is very useful. I wouldn't need a whole set.

As others have said, get a feel for the knife before you go out and order them. Check out Williams-Sonoma, as they tend to carry the higher end stuff. Personally, I very much like the Wusthof knives. I got a set of the Henckels as a wedding gift, but have used the Wusthof chef's knife at my Aunt's place. For me, the Wusthof is a better quality knife, and I prefered the weighting and grip on it than the Henckels we have.

Nothing wrong with picking them up online since you can get a much better price. Just make sure you like the feel of the knife before you spend a few hundred bucks on it.

SAIT might sell them (As we do here at NAIT). They'll be very good knives, since it's what the students use.

As well, I believe you have a Condon Barr in Calgary too, they sell to the public.

Just another option....

SAIT Bookstore is a good place to get good knives, I believe they sell Victorinox, good brand.

Global are the current best if you want to spend the money.

Buy the three knives you need, the big sets usually have a bunch that see no use.

As a starter set I would recommend a boning knife, chefs knife and a slicer. for a paring knife just buy the $5 henckels disposables.

I use a henckels boning, victorinox chefs and a global vegetable slicer as my main knives, I also have a Wustof chefs knife that still has the best rocker and feel of them all.

Most of the wholesalers here will sell you a knife as well. Crown, Bridge Brand, Hendricks, Geanel.

Cheers

I'm not a fan of metal handles, they don't look very comfortable, that and they look ugly...LOL.

Gotta work well and look good...haha.

Grohmann Kinves used to be the big thing back in NS, I never paid much attention to them, but they are 'sposed to be well known, and tourists were always in that place (their building was just a few blocks from where I lived, yet I never actually went in to see what they had...

http://www.grohmannknives.com/index2.html

Oh and I forgot to mention, when I worked for Michelin, they used to use their knives for cutting rubber, and michelin never really cheaped out...
