Anyone have any tips for doing this._ It is on a 1987 S10 with discs in the front and shoes in the back._ Any pointers or tools needed would be really helpful.

Disc are easy just a few bolts but don't lose those little clips. Bleed the brakes starting with the longest line ( rear oposite side of the Master cylinder) to the shortest ( Front nearest the Master cylinder)
As for the drums they can be tricky. You need a brake tool to back off the shoes all the way or you'll never get the drums off. They make special pliers for the springs but you can get by without them. The drums can be tough to get off at times so a good plastic or brass hammer may come in handy. Don't forget to get drums and rotors turned.
I'd also do the rear wheel cylinders rebuild or replace unless they where done not long ago. Also repack the wheel bearings.
One more make sure you dont any break fluid or grease on the rotors drums disc and shoes.

Only bleed the system if you need to. Unless doing a full brake fluid flush best to keep that baby sealed. Especially on a chevy the proportioning valve like to reset itself causing all kinds of problems.

The reason i was thinking of changing the pads is that when i brake now the car pulls really hard to the left. The alignment is fine and when i checked the pads and rotors they looked fine too. I am not sure what is going on anymore. The car only pulls when under braking. Any ideas what is going on?

how about checking your tire pressures and seeing if they are equal all round OR.. you got a really heavy gf, j/j
