View Full Version : suggestions on how to cook game hens?

gonna make a couple of these for tonight. usually, i split them down the center and grill with some Moroccan spices, but it's cold out so grilling isn't an option for me haha... thought i'd check on here and see if anyone had any recipes aside from straight up roasting. any suggestions?

cook them on the stove with some spices
Onion Powder
Garlic Salt
Bay leaf
Fresh Ground Pepper
Basil
and a bit of soy sauce

cover, cook on medium low with water, no oil

On another burner
sate up some fresh garlic and white or red onion until golden

go back to chicken
turn burner to high let it heat up to boil the water away, careful not to burn the pan
take half - 1 cup chiraz wine (depending on pan size and number of chickens)
add it to the pan and evaporate all the alcohol, turn down heat at the first sign of the wine boiling

let simmer on medium until most of the liquid has evaporated

edit the above would work better if you trimmed the meat off first instead of cooking the whole hen
