Which part of a cow makes the best steak? I would like to buy some raw and cook it myself, where is the best place to buy?

What is best to you? Tenderness or taste?

Tenderloin is the tenderest part of a cow, but Ribeye has the most flavor.

Tenderloin.

Leanest and most tender cut.

There is a reason it is the most expensive.

Big fan of the Loin cuts. Strip loin excellent as well as the tenderloin.
If you are worried about the price of these "better" cuts, buy a smaller steak, and enjoy it. No point buying a pound of shoe leather.

When cooking steaks, don't fuss with them too much. Don't constantly flip them, just leave them alone with only a small number of flips.
Let the meat rest after cooking for a couple minutes before cutting them.
Also, don't over-season good meat. It's not necessary.

Agreed. I crank my grill to as hot as it can go (usually around 650-750+) and do an inch thick steak about 3 minutes per side and only touching it once to flip it. Without high eat you don't properly caramelize the fat and don't get any flavour.

Also, for those that cook their steaks anything more than to medium done-ness, you can pretty much ignore this thread and eat whatever cut you want as it will all be the same grey meat.

Steaks are supposed to be enjoyed between rare and medium. Overcooking a steak is a waste of beef.

Now that I make my own meals I buy a whole vacuum packed tenderloin. Then I take it home and clean it up a bit (cutting out the silver skin ie the grizzly stuff). Then cut it into however thick I want it (usually an inch and a half to 4 inches). I usually cook mine medium rare to medium. Little bit of salt, little bit of peper and some oil to lightly coat the meat then off to a high heat griddle or pan (if it's nice outside - bbq) and you're good to go.

Serve with a simple salad of lettuce, cherry tomatoes and shaved strips of cheese with a tiny amount of dressing that you like. Or a simple mashed potatoes with some shredded cheddar (or any cheese that you like) and some veggies like broccoli (quickly sauteed in some butter and garlic, just pepper no salt).

If were going for favorite cooked steak, I love mine rare. Marinated in extra virgin olive oil, worcestershire sauce, salt+pepper+garlic to taste. :drool:

i personally love a good tenderloin cooked medium with just a nice sliver of pink down the middle. I buy my tenderloins whole from Costco then cut my own individual steaks to size... On average the whole tenderloin is around $70 depending on weight, and i can cut at least 10 good sized steaks off of that.

Damn this thread, i just got grill fever :drool: :drool:

I've got a few strip loin steaks in the fridge right now.... it's 11:30PM but still, I feel the need to go BBQ..... Why did I open this thread?...


As far as price vs taste strip loin is my favorite pick. If money were no object I would pick something else but this is the best compromise I think.

I like ribeye. I don't really like fillet mignon, its tender but I prefer a meatier taste. Yeah and go to Costco.

Montreal Steak Spice + Olive Oil, let the BBQ heat up to as hot as it will go before dropping the steak on so the meat sears and traps in the juices.

2-3 minutes on each side, as rare as you can take it.


Perfect steak every time.
