well if you think making foams is molecular gastronomy then perhaps there are some places doing a little bit of the molecular thing. Chefs Table i think does some foams and jelly cubes. But really playing with science and food not so much. I dont think at least i could be wrong.

Cool! Reminds me of something you would find at a Heston Blumenthal Restaurant or even El Bulli.
