Where can I get to print up some custom t-shrits - nothing fancy, just text on a pink shirt, for a stag this weekend?

The Rocket in Kensington are awesome. Super helpful and work with you to get the result you want. I used them for halloween stuff.

Dude, those little outlet places in the malls (I know Chinook Centre has one for sure) can do it.

i saw the one by chinook, for an outlet place the quality of the prints they make is pretty good but I dont know if they do custom labels

Theres a little stand in Sunrdige mall on the lower level that does them (I think closer to Footlocker). Good quality stuff IMO I got a shirt done about a year and a half ago cost me around $35 and no signs of wear and tear showing so far :D
