+1 i would think it be somewhat along the lines of other animals of the same nature (ie: lean and does a fair bit of running) like deer or caribou/buffalo.

I would contact Bouvry Exports they are an exporter of horse meats and other deli delights, but I am sure they could point you in the right direction.

wow, that is pretty cheap, that is like $1.10 a LB, cheaper than ground beef right now!

most people in canada are shocked about people eating horse meat, as they tend to think of them as pets as people give them names, just like a cat or a dog. Look past that, and horse meat is pretty good.

I always thought horses didn't have much meat on them, they seem very lean and muscular, which is usually very hard to get any type of meat from.

They seem to have very thin skin and plenty of muscle,
You learn something new everyday I guess...

ummm, you do realize that the muscle IS the meat?

not sure what you are thinking here...

'meat' = the stuff between muscle and fat

For some reason I thought overly muscular animals were not good for meat...

The muscle does turn into 'meat' but I thought that some fat around the muscle was better for the conversion into meat....

Muscular animals will produce tough/lean meat

You are hugely, HUGELY misinformed. There is no mystical conversion fueled by fat when "making" meat.

In my opinion, muscle IS meat. Fat just makes it taste better and have better texture (not as rough). Some people think of steak when they think of meat (which is a combo of muscle and a little fat.) Which is true, because supposedly meat is just something you can sink you teeth into from an animal. But most can consider pure muscle meat, but not pure fat.

So if you want to follow the norm, meat is considered muscle only.

Therefore, horses DO have much meat on them. And it would be EASY to get meat from horses since they're lean. The opposite of what you think. It's just not as pleasing to eat compared to meat with more fat attached to it.

Thanks for the info, but I said "I always thought" not "I was always told" ... meaning I was not mis-informed but rather did not have a correct assumption about the facts.

Also, there is a 'mystical' process in which muscle is converted to meat (now that I've looked further into it) although fat does not come into play as much as I first imagined.

Horse meat has loads of carcinogens in it.

And in Europe it is seen as poor people food.

It was quite delicious, and common, when I was living in Honduras.

Gordon Ramsey discussed horse meat on an episode of the F Word. Telegraph Article (http://www.telegraph.co.uk/news/uknews/1550742/We-should-eat-horse-meat-says-Ramsay.html) "The Scottish-born chef admits: "I've eaten horse", and says that it is healthy, with lots of iron and half the fat of beef and far more Omega 3 essential fatty acids"

Yes I know you personally thought that. I was just saying misinformed because I wanted to be polite...that is all. I didn't want to go "zomg you wrong..." and have you all offended and such.

I looked slightly into it as well, and I wouldn't say any fat is 'converted' at all. Not plays a small role, plays no role from what I gather. In my post, I said [There is no mystical conversion fueled by fat when "making" meat.]

And from what I can see, there is nothing wrong with that statement. Interstitial fat is NOT used for any mystical conversion.

And I wouldn't say the meat is really 'converted' at all; from what I have gathered...muscle just releases energy after death and contracts. And packers need to freeze at a certain time to ensure tenderness. No real protein 'conversion' there. More like a 'guide of how to make meat more tender.' Unless you saw some article I didn't.

I haven't cooked it yet my buddy who's flying in on Wednesday
is going to show me how to prepare it and properly cut it.
I'll post some pics.
Nobody in my family wants to eat it except for 1 of my kids.
I might have to have a firesale or i'am going to be stuck with a lot of meat.
Things you do for friends.
Or i'll have him prep it and have a shop night.

So the meat is frozen? I am curious how your friend prepares. We weren't told as kids what the meat was..it's amazing what kids will eat when they don't know what it is.

If you ate game meat what would you say the horse meat closely resembles? I grew up on Moose and deer meat and only have beef at take out spots until I moved out of the house and then never got game meat anymore. I miss it so much. I have tried pretty much everything except Horse and dog. Fiance used to eat dog meat back in Vietnam.

I'd have to say I don't know.I ate dog,cat moose deer and bear..
Lets just say it doesn't taste like chicken.
Very sweet beef if that makes sense.

He made Carpaccio with it last night and it put sushi to shame.
