woon does not exist in mandarin. FYI

the cantonese sound woon can be any of the following and more
換 援 緩 碗 煥
they all make a "woon sound" at different pitches...

as for chai in mandarin
差 柴 拆 豺 釵 儕 祡 喍 蠆 囆 儕

of course.. this all depends how good you are with chinese phonetics.
Mandarin (in Mainland China) has a standard set of english letters that recreate the pronunciation sounds. . Even Taiwan mandarin has it's own set of symbols for different sounds, which also have a separate set of english letters to translate.

As for Cantonese there's 2 known (known being that these are they only ones i know of and i assume are most popular) methods to make phonetics out of chinese words. These are also very different.

i.e. moon (月) is jyut in jyutping, and yuet in cantoping.
