the 5-way switches on my guitars have both shit the bed as well as my volume pots.

I want to get a megaswitch P and E. I've seen them at Stewart-Macdonald for about $18 each. is there anyplace in town that sells these?

also, can anyone comment on 250k vs 500k vs 1 meg volume pots? Both of my guitars have volume only.

i know that the higher the resistance the brighter the tone, but how bright is bright?

Not sure where to get those switches.
Depending on what you want to do, you could probably use push/pulls to achieve the same effect.
The general rule is 250 for singles, 500 for humbuckers.
You can experiment from there, but there's no hard and fast way to tell what's going to be too bright, as tastes are subjective, and pickup voicings vary wildly.
If you don't find your pickups to be either too shrill or too muddy, then I'd stick with whatever values you currently have.
