It's really not difficult. You can buy the machines that will take all the photos for you at increments. Usually you are looking at a 300mm lens or longer though and they will take several thousand photos over several hours to stitch together.

The panorama required two 25-megapixel Sony A900s, 400mm Minolta lenses, and two days each of shooting and post-processing.
