They are using ether for that, highly dangerous method, but very effective if you are out on the trail or something. As far as tireshops go they have big air blasters to seat beads on tires like that.

This is a proper bead seater that they use on big tires. This guy is CRAZY to stand behind it. NEVER stand behind it.

I've used the fire-mount method in a pinch a couple times. Works fine if you don't mind cleaning the scorch marks off the rim, haha.
