How loud is this thing? I'm looking at a few right now and this seems like what I need. Are those hard drives set up in a RAID array? Is it easy to do it if not? I'm looking to have something like this thing running all the time so I can remote into it from school and stuff like that.

No RAID array on the retail home servers. It's a JBOD setup and folder duplication is turned on and off manually by the server operator.
I know it sounds suspect but in the Windows Home server implementation it does work quite well.
By the by, if you do a fresh OEM install of Windows home server on your own self-built rig, you can use H/W raid, the Acer and HP implementations of WHS though include extra features you don't get out of the box on a M$ OEM WHS install such as the Twonky Media Streamer you get with the HP boxes, etc.
