What are some good bikes that fit these category? Meaning street legal dirt bikes. Preferably 250cc or higher.

I believe a GTS 300 would suit you perfectly.
I got to review a whole bunch of dual-sport motorcycles a couple of years ago, and a couple that really stood out to me where the Suzuki DR-Z400S and the Yamaha WR250X.
In my Suzuki DR-Z400S review (http://www.beginnermotorcyclereviews.com/suzuki-dr-z400s/) I commented that it had some good power down low, making it easier to ride and making it's smaller engine seem a lot bigger than it was. In the Yamaha WR250X review (http://www.beginnermotorcyclereviews.com/yamaha-wr250x/) I commented that the WR250X was possibly one of the most fun bikes I had ever ridden- supremely capable both on and off road.
Other bikes to consider would be the Yamaha XT250 (review: http://www.beginnermotorcyclereviews.com/yamaha-xt250/) or the Honda CRF230M (review: http://www.beginnermotorcyclereviews.com/honda-crf230m/). Both are good bikes, though if I had my pick, I'd probably take the WR250X. That bike was just too much fun. :)
