Where in Calgary can you buy good beef jerky? I don't want the 7-11 stuff, or the sobey's garbage stuff. But the like.. none name brand good stuff without all the added extra's?

Just make your own there are lots of recipes on the net. You don't need to buy a dehydrator although it's handy. You can marinade in all sorts of flavours. I usually do a spicy and a regular. Just make sure you buy very lean strips of meat or you will be cutting fat out forever and cut very thin. You can store in mason jars, and keep for some time plastic bags produce moisture. Liquid smoke is your friend - some of the best jerky I have made has been with liquid smoke. Just remember a little goes a long way.

Tons of recipes, they are oven style not dehydrator style.

To add to this list:

Back Country Butchering, in Cowley, Alberta.

This is by FAR the best jerky I have ever had. Pork and Beef, cut really thick and marinated. So tender and delicious. If you're heading to Fernie, I would HIGHLY recommend stopping by and grabbing some.

They also have absolutely unbelievable ribeyes.

Seriously, best Beef Jerky ever. Even white ppl love it. Singapore style, beef, pork, spicy. Place is a hole in the wall, just absolutely covered in grease and disgusting, but nobody cares. I usually buy a small suitcase/gymbag full whenever I go to vancouver.

They ship to Calgary too if you're jonesin' for a hit haha.

Everytime we go to Vancouver or have friends coming down, we pick up 5-10lbs. Completely agree. Best Jerky.

I think we have 4 or 5 pounds in the freezer right now. I lol'd the first time I saw their little store... pretty gross.

What kind of meat do you end up buying?

I was thinking of getting a roast and slicing it up as its the most economical

as for the marinade I intend on using

Soy Sauce
Salt
Pepper
Crushed Chill Peppers
Cayenne
Hot Sauce
Lime
Liquid Smoke
Worchesteshire

As I'm trying to keep it as carb conscience I won't be using any sort of sugar, but I may add some Sugar free 7UP as it adds a very nice sweet tint.

Marinade it tonight, cook it in the oven tomorrow night and store it overnight ready for Thursday snacking

I generally use a flank I was told by the butcher that was a good cut. Rump roast works well just make sure you trim the fat.

Hope it turns out well.

I tried Jerky King and at first I had a similar opinion but I tried toasting it a bit in my toaster oven, just until the sugar caramelized and it was actually pretty delicious. Definitely worth the trouble lol

Indeed. I recently went fishing near Longview so I decided to stop in on the way back for some jerky. It's been a few years since I've had it and remembered it being pretty good. It's quite expensive ($20/bag containing the same amount you would get for $10 in the city) and tasted processed.

I will, however, give them props for their habanero jerky. Usually when a package says 'hot' or 'spicy' it's a big disappointment but this stuff was smokin hot.

Longview Jerky is by far the best IMO.

I couldn't believe how easy it was to make beef jerky the first time i did.

Slice meat. the thinner the better.
marinade. whatever flavors you choose. it's up to you, search for some idea's online.
dehydrate. via dehydrator. on oven racks or in a smoker.

it'll take a couple tries to get it right but saves big bucks off buying store brands.
