Hi gang,
I'm looking for a quiet, classy bar or lounge, preferably with low lighting and some "isolated" or "secluded" seating or booths.
Need to have a private conversation with someone and dont want to be interrupted. The meeting will be on a weekday and Downtown would be preferable but open to suggestions.

The Hyatt lobby restaurant, Thompsons, is good for this. I've done many arms deals there.

I've done many arms deals at Loungeburger on Tuesday evenings. It's quiet during the week and often my associates and myself have an entire section to ourselves.

Lounge Central 899 in Hotel Le Germain should fit the bill also... Not exactly private booths, but you should be able to find an "isolated" corner.
Edit - Except they don't open until 4... Not sure if you mean weekday, or just during the week...
