View Full Version : Light & Tasty spring/summer eats

With my recent travels in some FSU countries and around the Middle East, I've found some very light and tasty spring/summer foods.

My favorite thus far is a Cucumber + Tomato salad (cucumber, tomatoes, onions, tossed in a vinaigrette dressing with fresh dill). I had tons of this salad in Ukraine.

In the various Middle Eastern countries, I've had a salad of Lebanese or Turkish origin (I believe) called Fattoush which is nice without a red spice which is extremely sour. Also Mutabbal/Babaghanoush is very tasty too.

Shaved green papaya salad.
So many variations of it, you could use cabbage too.

Add crushed peanuts, dried onion flakes, shrimp or chicken, fish sauce, some mint as a topper.

Refreshing and you can eat a ton of it.

Thinly sliced beets in dressing of: lemon juice, olive oil, parsley and pistachios

Sautéed kale, sliced almonds, orange zest, olive oil

Chickpeas, artichoke hearts, olives, feta, cilantro, red onion, olive oil, honey, S&P

My favorite patio drink for hot summer days: A Crown Float. :eek: Most. Refreshing. Drink. Ever.

1/2 pint of Strongbow
1/2 pint of Guiness floated on top.

So good!

We eat a similar salad, but with mozzarella cheese balls in there too. So fucking good.

Would probably be a lot better with a different cider. Strongbow is :barf: Get some Somersby or something alike.

Grizzly Paw raspberry beer is really refreshing. Or their grapefruit sofa

Julienned green mango is what I use when papaya is unavailable.

I add some lime as well and a touch of brown sugar for taste. :bigpimp:

So good! On a partially similar track, if you are going to spend a long time at the pub, try ordering in this manner
- Dark beer -> light beer -> dark beer -> light beer -> dark beer.

I find it refreshing. For bonus points, order one of each every round. That'll get you to a destination, it's ExtraSlow approved!

For a really refreshing beer i LOVE Royal Jamaican Ginger beer. Its brewed with the ginger, not just flavored. Very sweet, with a great bite. Delicious.

The best ginger beer ever is house-served only at Truffled Pigs out in Field, BC.

Hands. Down.

Their food is also incredible.

They won't disappoint. Their attitude is kinda unique too, very small town, we're nice but not gonna shove sunshine up your ass :rofl:

I really like their beef bourguignon but everything is good haha.
