I have a pile of good quality soil from flowerbed that was removed.

Would like to fluff it up by shoveling it through a screen.

What's the best type of screen to use? What's this screen called, and where can I buy it?

Something like this:

I don't know what the best type of screen would suit that application, but the kind in the photo is often referred to as expanded metal mesh or expanded metal screen.

Any of the metal retailers will carry it, such as Russel Metals, Metal Supermarkets, Varsteel, etc.

Lee Valley carries a smaller scale sifter depending on how much you need to sift it may work.

If you feel like building your own, a few 2x4's and some "hardware cloth" metal mesh from Rona will do the trick.
