Does anybody have any good recipes for making an authentic Texas Breakfast Burrito?

I had my first while I was in Austin Texas, and I probably ate about 6 that morning... it was amazing.

I'll try to make a similar batch tonight, and I know that the ingredients are pretty universal but there are ways to make or break them. Here's what I'm planning on using tonight:

- scrambled eggs
- ground beef with seasoning mix
- shredded marble cheese
- spicy salsa
- finely chopped green peppers
- standard 7'' whole wheat tortillas

Any tips or suggestions?

I know The Belmont in Marda Loop has really good breakfast burritos, if you go, you can actually watch them make it for you.
