How do you guys do it? Focus, then keep your finger half-press on shutter, and move head for better composition, lock head and fully press shutter?

remote shutter actuator
i guess I should read your entire post before replying.
free ball - focus
tighten balls, half shutter to confirm,
shoot
usually done with a remote shutter
I use a shutter release cable when I've got the camera on the tripod. Never steered me wrong so far!
Wireless remote FTW unless your trying to track something then you pretty much have to have your hand on the camera. I'd also suggest using mirror lock up or delay for macro shooting or really slow shutter speeds to help eliminate mirror slap.
Lock the tripod down when you have your image framed AF/MF, wait a few moments for it to stop shaking (i have a cheap tripod ) then use wireless remote with 2 second timer, done.
