The file system and the file contents aren't really related. If you copy a file from 1 file system to the other it just affects how the file is stored on disk... so
1. Yes, you won't be able to edit it directly but you can copy it to the mac and edit it there.
2. again should be no issue unless you run into 1 of your files that's >4G
I think your idea of splitting it into 2 partitions is a good idea.
