i went to pho xuan yesterday and i think the 'diry' look of the place definitely adds authenticity, haha....pretty good, though...i still think bagolac is the best place that i've tried thus far.

Its star anise. Most if not all use it, some places use more.

You prolli need to figure out which style of Pho broth you like, the Northern style or the Southern style and then theres the mixture of both...

Well imagine if instead of writing that letter to the editor, she just posts on a car forum for car enthusiasts. That's Kritafo.

    Lotus
I found a beetle in my soup last time i was there. I told the waitress an she brought me back one size smaller then i originally ordered.. i didn't even touch the second one because i had this weird feeling she just picked out the beetle, emptied it into a smaller bowl an topped it up with broth.

    never went back since...

Went to Pho Taurus in Country Hills....the first time my pho eating rules have never panned out for me.

Rule #1: Restaurant must have "pho" in the name
Rule #2: Must be asian people working and eating there
Rule #3: The beef must not turn white while cooking in my soup

Pho Taurus: Pho Tai (Rare beef noodle soup)...looked great, beef looked good, asian people working and eating, big beef slices, great noodles....HORRIBLE BROTH

    Never going there again.

Other than this experience...my pho rules have been good to my pho eating experience.

P.S. never eat pho in red deer...(white beef???)

Not sure if I put my 2 cents in, but Pho Hong Viet across Bow from the Wallmart in the SW is my favorite.

Changed to make post appropriate (Apparently pasta is too generic for GQBalla's taste)

    But really, upon further investigation:

Noodle: is a generic term for unleavened dough made from many different types of ingredients and includes a variety of shapes

Pasta: is an Italian food made from a dough using flour, water and/or eggs.

Always figured dough was dough but now I disagree!

I notice most of the time, pho is hit or miss. It could be really damn good one time or disgusting the other time.

When thinly sliced beef (thit bo thai) for Pho Tai or any pho is dipped into hot broth it should turn white. What are you expecting, brown like it was being fried/grilled? And pho tai when brought out, the thinly sliced beef (thit bo tai) should be on top of the noodles and red. You then dip it down in your broth to cook it (then it turns white). Hold it down longer for it to be more cooked (whiter), hold it less to be more raw (white/pink).
