Had a craving for teriyaki steak and some low quality striploins in the freezer.
Whipped up a simple teriyaki, marinated the steaks in it from frozen all day.
Reverse sear on the Kamado.
Great grill marks from all the sugar in the teriyaki.
Served sliced over rice with a helping of the teriyaki from the marinade that I boiled off and thickened. Paired with a ginger squash soup and bag kale salad.

Today it’s salt sugar pepper paprika chili powder cayenne onion powder garlic powder, not in any particular quantity. I like the sugar on the ribs, gives it some Color and I’m cooking them slow enough it won’t burn.
With baste with a combo of sweet baby rays, ketchup, leftover rub, and apple cider vinegar later.
Honestly the only part that is truly required is S&P.

Uniform layer and then about final 10 min at 250°F?
My last hour was pretty bastardized, using a different charcoal and I ran out of fuel and tempt so I had to pull the slow roller out and relight about 45 mins before done.
What I did was the mixture I described above, that went onto the ribs in foil for 2 hours, after the 2 hours I saved about half a cup of liquid from the foil and added to the remaining bbq sauce mop.
I mopped every 15 minutes with the bbq sauce and drippings mop and that cartelized really nicely over what was ultimately an exposed fire. So basically a very fatty sugary mop every 15 minutes which set nicely on the ribs. I wanted to keep it extra moist becuase I had exposed charcoal under the ribs which led to great results
Didn’t add anything when they were done just a quick rest and eat.

I've been rolling with not saucing ribs while they smoke, get to taste the rub and just sauce them with the Lillie Q sauce from costco, stubby bottles with more liquid consistency than thick sauce and have been enjoying it more so.
For rubs I've been surprised with the quality of Pitboss rubs, they had a sale last fall on their website and I got like 10 or 12 bottles of rub for $80 shipped, super good quality and great flavours.
Last of my save on poverty ribs. Wish I had bought 20 of them
