    Played with my new toy. Nice crusted sirloin roast.

    Really happy with the blower, I think with this cut I would have let it go another 10 degrees next time to tenderize some of the connective tissues a bit.

    Anyone have experience with Camp Chef? Eyeing up the Woodwind Pro 24 as it'll smoke plus has a sear station on the side that I think can be converted to Nat Gas.

    We're not a big BBQ family but I see us cooking steaks only occasionally and smoking things relatively more often than anything.

    I've had my Camp Chef for 8 years. I had to replace the controller at around the 5 year mark for about $85 off Amazon.

    Otherwise it's been solid and the ash clean out is a big convenience.

    The Kamado Classic 2 is also on my radar. As an owner, how do you find it for searing steaks? For that, is it fairly quick to get up to appropriate temps?

    I love it for everything.

    Time to cook depends how you go about it.

    With a chimney it’s pretty much ready to go in about 10-15 minutes since you don’t need to really heat up the ceramic.

    Fuckin NAILED some beautiful smoked chicken thighs, bone in. Smoked on a pile of Blues Hog plus a side of Japanese Binchotan and everything turned out golden.

    Fireboard? My parents got me a fireboard 2 for Christmas and it's ridiculously good. I never had real trouble keeping the temp on the kamado manually but the fireboard is next level

    Yup fireboard 2 Pro.

    Have had it a while but only just got the blower and it’s a game changer. Just speeds things up and saves me a lot of trips to adjust vents through the day.

    Nice to be able to blow some air into it to heat things up too.
