Honestly, I would try to do some activities that you have never done before, or something you haven't done in many years.
EG: Opera, Shakespeare in the park, cavolina (or whatever it is). Maybe a trip together if the pocket book allows for it. Maybe check out a festival if there is anything going on these days.
what really matters is if you know something that would capture your "friend" personally, on a deeper level. Like, finding something that she used to have as a kid, or something that reminds her of the best times of her life. It shows that you listen, and care!

Yeah, do something you've never done before. Skydiving, or paragliding. My wife bought us fly fishing lessons one year, and it was fun, since neither of us had done that before.
