Another idea for Monogram, admittedly with less selection, is their bulk beans. I bring my own canister and they fill it with their bar espresso beans for a cheaper price. I want to say about $25 for 500ish grams of espresso. Freshness is fine.
Further investigation is required but I think Paradigm Spark is as good, or better, than my beloved Monogram.
The prices there are steep, such as $11 for a pourover, but damn this might be the best pourover I've ever had. She used a different pourover device than I've seen before, which stops it from draining while blooming each pulse and then has a release valve. I can't even find it on their website to show you guys, maybe I missed it (it looked like glass with a black rubber stopper on the bottom). Her technique with the gooseneck was really cool to watch, and they have a little taster to ensure quality before they give it to you. Impressive!
They have a competition set on the menu that I'm gonna go back for soon. Ben's set (espresso+capp combo) from years ago blew my mind about what coffee could be and hasn't been topped yet. So I'm eager to try more stuff here, but it's peak $$$$$ coffee thread.
Our office is in a shit part of town but there's some seriously good coffee and food options, breweries and Zyn all within walking distance.

I really should try S+F, but after their hot chocolate competition description from years ago I can't bring myself to support such a try-hard establishment. Even read a comment on Reddit where the barista refused to make someone coffee because they were going to put cream in it. Would I do that? No. Is the barista a douche canoe? Absolutely. Seems par for the course at that place.

I ordered a new roaster, will be able to do 1 KG batches in the future, looking forward to the upgrade. Green bean costs have definitely gone up just like everything else in the world but not outlandish.
