Going to China for a week. Splitting time between Beijing and HK. Flights and hotels booked for mid April.
Any ideas / thoughts / suggestions on where to go, what to see, what to do?

Plus going to Stanley is a solid couple of hours of sightseeing anyways. Just don't do what I do and go on tuesday when they're closed

Beijing - Great Wall (kind of obvious), everything else I saw wasn't that exciting to me but still neat checking out since I was there (Forbidden City, Tianamen, Temple of Heaven, some tombs I can't remember the name of)
HK - Eat, drink, go to Macau.
I don't have Beijing experience.
But I did go to Hong Kong this past September
Go to the Peak and get an iconic view on the city.
Make sure you take the old fashion Tram up and down the mountain

Make sure you spend some time in Central Hong Kong
there is a hipster western vibe there. lots of British business people in that area with trendy bars and such.
and when the sun sets, walk over to the party district called Lan Kwai Fong - hit up a bar or a club (lots of westerners there)
Go see the Goldfish market if you like aquariums and pet stuff

If you have time, I suggest you go to one of Hong Kong's islands.
its a nice break to get away from the hustle and bustle and see a different side of hong kong

Lamma Island and Cheung Chau are on my list.
Go to Lantau Island and see the Giant Buddha
take the Ngong Ping 360 cable car to the Buddha

Great stuff so far guys. Very helpful. Keep it coming.
I dont think we are going to do Macau. We had considered it but neither of us are big gamblers so we decided against spending a day there.
How are the fashion houses in HK? Cheaper than here in the US? Good selection? I noticed our HK hotel is super close to a lot of them so I wondered if its worth paying a visit.

this is probably super touristy and lame for HK regulars, but the Jumbo Kingdom Floating Restaurant was pretty cool... we went for dim sum.
i recommend walking a couple blocks away from a touristy area, then just find a whole in the wall and get some won ton soup or something, guaranteed to be cheap and amazing, but maybe I got lucky the 2 times i did this.
Silk Market in Beijing was a good time. It was fun to bargain with the store owners there. I bought a bunch of 'fake' dress shoes to wear in the muck that were really good quality and they were about $10/pair.
