While the muscle/meat that is available within a pig's head/snout or even anus might be used is sausages or other products for human consumption, I would have to question if the associated skin is included. Also, because there is additional and probably more extensive work required to separate these unique muscle masses from the skin they might be attached to there probably is a point at which the effort and expense to do so negates any profits that might be made and that is why a lot of this turns up in non-human food products like the pet industry.
