I'm not sure what it was before Saigon Y2K, but back in the late 80's/early 90's there was a Mother's Pizza and next door was Father's Lounge. If you’re talking brentwood jamesons The current Jamesons location was parking lot before that. Pizza Hut and Madison’s was just north/west of that. Madison’s was where that employee was murdered and burned. Prior to Madison’s I think it was a restaurant, I want to say one of the early Joey tomatoes but I’m not sure. Could have been a bar before that as it had a very weird setup inside for a restaurant.
Edit: the Madison’s building was where jamesons started out so that might be what you’re thinking of. The new location had to be built because university city’s access road/underground parking access sits on the old site.
