The sodium salts are actually just soap (sodium lauryl sulphate). It's the ammonium mercaptoacetate that reacts with the iron oxide. Another name for it is ammonium thioglycolic acid.

3D BDX for example uses Sodium Mercaptoacetate as their active ingredient (and most other iron removers use a similar variant), CarPro Iron X is a bit different and uses Ammonium Sulfanylacetate (Ammonium Thioglycolate) as their active ingredient.
