    Default Sushi-grade Tuna Sashimi

    Hey folks,

    Anyone know of a good place to get sushi-grade tuna?

    We bought a box from The Meat Guyz several weeks back, it was $159 for 1.8kg which in retrospect is a terrible deal, having never purchased raw tuna before.

    That said, it was only ever flash frozen once and is delicious but I'm looking for any other vendors that might offer the same thing for cheaper.

    Any recommendations and personal experiences are appreciated.

    City Fish supplies a lot of the Calgary restaurants and I think they still sell to individuals/walk-ins.

    Restaurants like Nupo get their line caught tuna flown in from the Philippines extremely fresh (I believe 1-2 days old), but I am not sure that is something you can easily access as an individual. You could try calling them to see if they have any suggestions though.

    You could also try a place like Billingsgate.

    Are the above vendors selling them fresh or do they flash freeze them too?

    The MG rep told me that their tuna was flash frozen on the ship which is a big part of how it retains the quality. I don't want to lose sight of that.

    I thought they had to be flash frozen by law (not sure at what point in time though), but I am not exactly sure on what the Calgary places do to be honest, I haven't been in a while. Like you say, flash frozen on the ship is best.

    These guys are the only option in Canada for the New Zealand salmon nupo/Shokunin has... so from my deducing (cause I’ve never actually bothered to ask Darren where to get fish) this would be a good place to start, my quick marth says it’s cheaper than your last purchase too

    This? They bring in sashimi grade blue fin Tuna all the time and sell them frozen. I saw some Otoro a few days ago. That is if you want to turn it into sushi/sashimi. Probably not so much for Ahi Tuna?

    Try yyc.seafood on Instagram. And another foodie friend recomended Hiep Hoa as she got fresh uni from them pre-order flown in. No idea if they do fresh or frozen fish though. They on IG too.

    It's all been frozen at one point. That's how that works. Not just here, but japan too.

    Once upon a time I thought making my own sushi was a good idea, then I realized I was an idiot and this is one culinary area where I am happy to pay a pro to make me food that won’t give worms.
