I'm pretty handy in the kitchen. Fortunately so is my wife. Seems like most cases I see is either one or the other. My Mom was a horrible cook, my poor Dad had to come home to her suppers every night. All us kids were excited for Dads Sunday dinner.

For those of you that consider yourselves really good at cooking, how did you get to that level? Was it just trial and error/practice or courses at somewhere like SAIT? I'm decent but would always like to improve.

Following recipes is also a huge help and can help you get better at certain things.
Practice. Following the recipes pretty closely. Like anything after you've done it a lot you figure out what works and what doesn't.
A well cared for cast iron, baking sheet, sharp knife and fresh ingredients can do a ton of things. Fresh spices are critical imo - Silk Road is the bomb.

One key element that is not mentioned is sound. Ingredients making a noise gives a idea of the right temperature.

I love to cook, it's the perfect way to let my mind completely shift gears at the end of the day, I'd even say it's therapeutic. I enjoy combining ingredients in a different way every time, it's my best chance to let my creative side let loose. I've never opened any of my recipe books that people have gifted me over the years, I just prefer to come up with my own creations and I'd say maybe a couple of times a year I find I missed the mark and made something kinda bland, otherwise it beats pub food hands down and occasionally it's 5 star restaurant taste experience. So glad BBQ season is here, already grilled up a few great meals. Fresh habaneros, garlic, and ground pepper in damn near everything. I definitely find it tricky to cook for more than just the wife and I, just not used to making larger meals. The wife loves to take me out for dinners so it works out great, she can cook but has zero interest in it.
One thing is I hate following recipes exactly. I like to read two recipes for a dish, then don't read either while I'm cooking. Allows me to be a little creative.
Main thing is practice.
I find there's not many difficult techniques in "normal" cooking, but practice goes a long way with even simple techniques.
My personal tip is to stop cooking anything that says "quick" or "easy" in the recipe title, challenge yourself, fail a few times, and you'll improve.

I pretty much only cook what I kill, which ends up being a shit ton of fish, deer, elk, birds over the year. Wife helps out, I usually prepare the meat and she does the rest.
Other than that, we eat out about 5/7 days per week.
