We did the Paris to Nice via train in July. I was very unimpressed with "first class" train tickets. Spent most of the time checking on my suitcases because the sketchbags coming and going in and out of the first class train (upper level).

Good point - I didn't even bother to check out the regular class cabin. It might have been nothing, but there were a lot of people trying to sit in first class without tickets, one older lady had to move seats 4 times because the people who had a ticket for the seat she currently occupied kept coming onto the train. There was a bar car where you could get food/drinks and smoke, but I wouldn't let our luggage out of my sight. It's just sitting in a rack like a bus that takes you from terminal to terminal at an airport. The train ride form Paris to Nice is scenic and peaceful, it doesn't take long to get into the countryside of France. If it's just you and your wife, seat locations won't really be important, but if you're bringing the kids, you'll want to get a section with a table to yourselves. Bring snacks and something to do.
Most trains in Europe don't really differ much between 1st and 2nd like airlines do.
Why not fly down? I drove and didn't really feel like the landscape was that great until you're near the coast.

Seats look comfy.
We are booked for 'first class' from Paris to Bordeaux next Tuesday so I'll let you know how it goes. We chose it because we got to pick the seats with the 4 person + table configuration ( like in pic above), which hopefully makes it easy since we have an infant with us. Otherwise from what I read the differences between 1st and 2nd class is not that much... we will see..

All the videos I have watched appear to show that 2nd class seats are smaller and the cabins are much noisier.
I don't recall exactly but the price difference between 1st and 2nd class for us was quite minimal.. maybe 15-20% more per person. It was booked ~ 60 days in advance of the trip. My expectation of it is not that high..

2nd class is meh. Like what @msommers suggested, there's not much difference.
I'd recommend buying food before you enter the trains though. There are usually grocery stores in the station.
When I did all of Central Europe we only bought First/Business class seats on the trains because they were barely more expensive than 'economy', and the tickets were dirt cheap to begin with. For example a 3hr train ride in first/business was like $45 euro vs $30ish for economy - it's a no-brainer at those prices.
We did Amsterdam -> Paris -> Brussels -> Amsterdam on train with the family. Honestly prefer it to flying when hauling kids around.

usually you cant book train tickets 2-3months prior so just put a reminder to check later next year.
driving in central France is boring so train will make it less tiring.
+1 on buying food before boarding the train and first/2nd class doesnt really matter but i would get upper seats for better view
