    I had my wife convinced for like a year that scalloped potatoes were made with scallops. This was traumatizing to my wife who won’t touch anything seafood related.

    This was an extension of the time I informed her of what went into Clamato juice

    It’s a deep seated trauma, her dad tells me she once refused to eat a hot dog off a fish shaped plate. This actually explains a lot of things about my wife.

    Scalloped potatoes are a masterpiece and I will bare knuckle, meth mouth, fight anyone who disagrees.

    Green Bean Casserole is weird. I think I've only had that once and it was prepared by someone half-Native, so I suppose that's odd... It had enough of those creepy "funions" or whatever those are called on it to salt it up enough to drown the kg of beans, but it still wasn't good.
    Would not get again.

    Scalloped potatoes from a box has probably ruined the dish for a lot of people

    Also I think mac n cheese needs something extra added to be a casserole; ie. tuna or hotdogs

    properly made scalloped potatoes are amazing. No kind of potatoes from a box should ever be consumed by humans.

    Got all these dried hot peppers my buddy grew this summer and tried my hand at making my own hot sauce today!

    Used the Ghost Peppers with some apple cider vinegar, Russian garlic powder I dried that was from my moms neighbours garden, onion power, kosher salt and a bit of pineapple juice for a hint of sweet as well as some water to thin it out slightly. Going to let it all meld together for a few days before a real good taste test but a brief taste is fantastic and the smell is amazing!!

    Had it on the kettle for 3 hours at 300 degrees. Couple pieces of hickory. Pulled it off at 130. Did a reverse sear on the gas grill. The fat was so buttery. I used to cook them at 350F But definitely sticking to 300 no matter which method I use

    Arborio rice, half cup for two people. Up to 1L Chicken stock. Half cup Chardonay. A Tbsp butter. Tbsp of oil. A shallot. 4-6 cloves black garlic, we got ours from forage and farm. Maybe a half cup of parm.

    Cook the shallot in the oil for a bit. Add the rice and let it toast. Warm the stock in another pot. Deglaze the pan with the wine. Chop the garlic and stir it in. Add stock and stir until absorbed, add more stock and stir more. Maybe 25 minutes total, probably10 rounds of adding stock. Add peas (id use blanched asparagus next time) and cheese near the end.

    Scallops. Get from Costco, most places charge $30 for a pound of large scallops, costco you get a pound and a half.

    Heat the pan, I used cast iron, stainless is fine. Get it hot. Add butter, wait 20-30 seconds it should start lightly smoking. Add scallops, 90 seconds a side.

    That’s too bad... liquid gold! Next time try adding some to a roux, use that as the base to your gravy, (bonus points for deglazing w/leftover coffee or wine) chicken or beef stock for the bulk of the liquid

    Decided to try something different, wife simultaneously requested fish ( which she doesn’t like ) and needs to be on a bland near no spices diet...

    Picked up a beauty sockeye from Costco. 3 fillets and pan fried.

    Generous S&P, 7 minutes skin side down, 3 minutes on flesh. Probably slightly over cooked, don’t cook this often. Paired with simple S&P yam wedges. Tasty and almost no seasoning needed!

    Sockeye is so good. Even overcooked. I need to do some smoked salmon again soon. Although it's a pain in the dick.

    I have a personal problem with farmed fish, really grosses me out for some reason, this sockeye was wild. And real gorgeous color.

    Don't think I've ever seen farmed sockeye. I think it grows slower. Most farmed is Atlantic salmon even if it's from bc.
