using proper water temp today and so far the dough feels much better and already has way better stretch than the first time attempt. Hopefully it will rise well, I am still not too sure on the quality of my starter.

In quarantine I’m baking once a week, which gets you two loaves. Freeze one (they freeze great after cut up) and then start on one. You guys aren't wrong, I had white guy rice problems. I've never done "great" fried rice, but I've done better than this before. That's okay, it was a tasty lunch made quickly from leftovers. Had some leftover sushi rice sitting in the fridge, decided to make some sort of hybrid sticky fried rice.
Pork sausage, peanuts, cilantro, white pepper/5-spice mix, and typical base fried rice ingredients (eggs, scallions, etc.).
