    Odd... 20 to 22min is the sweet spot. Fall off bone, but cartilages still has a slight snap to it. Was it submerged fully in liquid? I used the rack thing to separate the liquid at the bottom. I also stand the ribs up vertically for the juices to drip away.

    Yes fully submerged in liquid but forgot to mention I also cut up the ribs in small finger tip size pieces as well. Thats probably why

    We ordered the Earl's cookbook a little while back, finally tried it out on the weekend. The Hunan Kung Pow was bang on (although the chinese egg noodles that we got were not exactly what recipe called for.. .but close enough). Going to do their cajun rub chicken w/ alfredo next.

    I made the most budget meal today and it was quite surprisingly amazing.

    - Frozen chicken nuggets crisped to perfection in air fryer
    - Clubhouse chicken gravy mix with drippings leftover from whole chicken
    - Aunt Jemima syrup
    - Optional: Waffle (in waffle maker or frozen Eggo)

    I think my new chicken nuggets dip will be gravy and syrup

    Made some beef ribs. I sliced these myself from the full rib and tried to keep a decent amount of beef on them. Salt, pepper, bbq spice rub, 23 mins in the *shudder* instant pot with some apple cider vinegar and water (ribs elevated from liquid), then 8 mins under the broiler, half with bbq sauce and half plain. Perfect tenderness and absolutely deeelish. Will definitely make these again.

    It was this club pack of PC pub style chicken nuggets for like $7 and I couldn't resist. It was almost half price and nothing wrong with it that I could see (e.g. close to expired, etc.)

    Ready for the best fucking sandwich ever?

    Here it is:
    -Costco cheese buns
    -Costco Italian deli meats (3 kinds, 3 per -9 slices total)
    -Shredded cheddar
    -Shredded lettuce
    -Avocado
    -Diced white onion
    -Sliced pickles
    -Sriracha mayo (lemon juice, mayo, Sriracha, pepper)
    -soft poached egg

    Start with the cheese buns and cut it in half and put the Shredded cheese on both sides. Broil 550 for 3 minutes top rack. Then put the Sriracha mayo onto one side of the bun, put your onions and pickles. Take the deli meats (the one I bought at Costco is so good) and put 9 slices of that (3 per kind). Put on your Avocado, poached egg with cracked pepper, and top it with a healthy amount of shredded lettuce. It may look like a lot of lettuce but it makes it very refreshing.

    Stack the buns together and eat this monster mess of a sandwich. Best sandwich I ate in a long long time. Let me know what you think. I am sure other condiments/toppings like mustard and olives would be nice too. Lazy method you can poach an egg in the microwave and glass measuring cup too. Look it up.
