    Staub is nice. Le Creuset is also a great buy; I've had mine for years and still going strong.

    I made a hearty lentil soup that I'll be crushing all week

    1.5 cup Lentils
    6 cups soup stock
    Diced Carrots
    Diced Onions
    Chopped Garlic
    Half Lemon or lime
    1tsp of cumin
    1tsp of coriander
    Salt/pepper to taste
    Any cooked protein you like (beef, chicken, pork, tofu)

    1.) Fry your veggies in a pot until it's slightly charred and the onions caramelized
    2.) Add lentils and just fry them a bit; add your cumin and coriander and it'll look like a paste
    3.) Add your soup stock and mix everything up, scraping the burnt stuff stuck in the bottom of the pan
    4.) Slow boil in low-medium heat for 20ish minutes with the lid closed or until the lentils are breaking up soft
    5.) Put it in a blender or processor so it purees; squeeze your lemon juices in while blending
    6.) Put back in the pot and slow boil for 5ish minutes with your protein; add salt and pepper based on your taste

    If you don't have a blender or food processor, you can do the same with a potato masher or a spoon but it'll take way longer.

    i have this going now:

    600g AP flour
    100 g whole wheat
    560 g water (80% hydration)
    150g starter
    12g salt


    I find mixing the starter with the water at the start of the autolyse way easier then trying to add starter to an autolysed dough already. And has worked well so far. If you want bread on saturday, i'd recommend doing this:

    and then at the first proof put it in the fridge overnight.

    Yes, it screwed up and didn't proof much. I'll give it another go tomorrow, tasted good though.

    Yeah its not a bad pan, I used to making pasta sauce yesterday as well. The initial seasoning on it sucks, so I will have to add a few more layers.

    In my experience tomato sauce/other acidic sauces will eat your cast iron seasoning away either way even if you have some good layers on it.

    my healthy breakfast in the morning (more like brunch though since I dont usually eat until around 10-11am) on weekdays

    2 packs of instant oatmeal with a teaspoon of Nutella
    1 sunnyside egg
    1 banana

    lunch is usually around 2:30pm

    TIP: Swap some of the instant oatmeal packets for plain "quick oats" if you want to reduce sugar.

    My take on Spam Musubi:
    Sushi rice, tamago (sweet omelet), sesame seeds, Japanese mayo, julienned cucumbers, and fake Spam (Holiday), all wrapped with seaweed.

    sadly I have 4 boxes of instant quaker oats to finish right now that I've hoarded since last year, figured now is the time to eat them since I'm too lazy to bring them to work lol.

    i like putting honey, nutella or peanut butter for flavor.

    1. Nuke plain oatmeal with water for 1min
    2. Add spoonful of peanut butter, slice in a banana, add splash of milk and mix to right consistency

    Sour dough bagels in the works... test bagel was decent... but a little lumpy looking. Dunno if final proof will fix that or not
