I'll be the odd vote and maybe it's the stove or maybe the cookware.. but I have had 2 induction tops and hated both.

Water was slow to boil and cooking took forever.

I prefer either gas or electric coil.
Call me crazy but I think that could ONLY be because you didn't have appropriate pots/pans.

Possible. I just did some research and apparently they use specific type of cookware which you wouldn't know as a renter.

It's not as complicated as you think. You basically place that magnetic business card from Boudoir Rouge on your pot. It's induction compatible if it sticks well.

I think it’s more a case of mistaking a standard cheaper glass electric cooktop for induction (expensive). They are not the same. (No offence btw firebane, it’s a common mistake)

Definitely the cookware. Even some stuff that is labelled "for induction" works, but sucks balls. A set that is fine on one stove, is shit on another.

I'd be firmly in the non induction glass cooktop camp...

The instant cool is nice - but... Being stuck to specific non cheap pans...

And I've watched too many movies - therefore I know running a gasline to your kitchen should be avoided - because that guarantees you're getting murdered and it'll be covered up Jason Bourne style with a magazine in the toaster and a damaged gas-line.

I have a "cheaper Non-induction" glass cooktop and it's balls. My inlaws have the induction version of the same Electrolux stove and it's awesome. I am mad jelly.

I went induction back in 2008, would never use anything else. The cookware issue is not at all the challenge people think. Way faster for boiling than gas or electric. Better temp control through the whole range. Low temp control is amazing. I used to be die hard on gas, until I spent time with induction. Just my 2 cents.

There are cheap pans that work really well. Like the Cuisinart Multiclad Pro or some of the Lagostinas. My cheap Lagostina actually heated up faster than my entry level All-Clad, although the All-Clad was superior in all other ways.

Thats the one we have (I think they only make the one), and it is awesome. It gets poor reviews for some reason, but we've had ours for six years with no problems.

We switched over to gas, a nice cast iron pots\pan set + gas is a pleasure to cook on.

Cast iron on induction is an orgy. Handles stay way cooler than gas.

I have this and some cheapo pots from Ikea that work well for the quick ichiban fix.

Would cast iron not destroy a glass induction surface?

A nice enamel bottomed cast iron like Staub or Le Creuset is pretty smooth. The cook will also have to learn to stir with his utensils rather than toss the pan like they are cooking at Thai Express.

    Fair.

Sometimes I forget that the majority of my cast iron is older than I am.

That's the entire point of cast iron. They last forever if you take care of them. I only have enamelled cast iron because seasoning takes quite a bit of work.
