In Edmonton, Farley's Truck & Auto Addictions does a great job on trucks and I suspect could do this. My friend drove his from mega south Calgary to go there.
I think VEX Performance might. I know they do DPF/EGR deletes on MB diesel engines.

How are they reliability-wise? I assume you’ve looked up common problems etc.
The powertrains are supposed to be very reliable with the right care, typical BMW stuff otherwise. I got a car without nav which is what I wanted but sadly no sport package. They are quite reliable. Common issues are related to the emissions equipment (scr failure, egr cooler leaks) and the harmonic balancer fails and should be replaced preventatively. OP: depending on whether you want to keep your cat or not, I would look at VRSF (or VSRF - cant remember) for the dpf delete and get the rest from AArodriguez. The SCR can be gutted and refit. These are pretty stinky cars catless though.

Definitely VEX, and you can get a proper dyno tune as well instead of just a canned tune. Just before I left there I drove a 335d that was deleted and tuned, it hauled ass and made fun turbo noises.
Jimmy tuned my x5 35d.
Zero complaints, all smiles
Upkeep is fairly normal, other than the fuel filters need to be changed every year or every 25,000kms.
Diesel here is dirty and likes to clog filters and injectors.

Big oof on costs. Think I’m just gonna do some preventative maintenance for now and leave it stock. It’s a lot more involved to delete fully than my truck was.
You can save money by doing the labor and sourcing the parts yourself....

EGR, Swirl flaps and DEF injector can be done in a few hours with normal tools. tunemyeuro.com has all that stuff.
Also recommend checking your thermostat temps since mine was bad and its common failure.
Downpipe is the bitchy part since you need to lift the whole engine cradle or do some cutting and hacking.
Jimmy was clear about the costs and time for all this stuff. He only offered me a canned tune for quite a bit so still humming about that.
Malone tuning is another option
