There are other issues tax wise. My wife is American and my son had to be born there for insurance reasons as we had no landed immigrant status yet for my wife at that moment. He was only there for a day but now stupid stuff like if I die and he inherits my shit, he is under obligation to pay tax to the American for my shit and I have nothing to do with the US! In the end, if you have no problem with the US government going up your ass for the rest of your life and don’t mind always having to double file etc and want to be able to be in the US long term and work etc, then great, but it is a lot of shit just to have a passport.
If you have enough assets to have to pay estate taxes you can afford to dodge them.

The only citizenship you don't want is the US as a dual citizen, as double taxation is a biotch.
Edit: on the off chance you do want a USA, do *not* apply at east coast New York or west coast LA, apply in Texas. If you have a Texas USA point of entry, and Texas decides to leave the USA - there will no doubt be a much lower taxation system there. Only if you intend to become a Hawaiian welfare bum should the other points of entry be considered.

An EU passport is meh for traveling, particularly if you're Canadian. While the EU line is typically quicker, I've been on many flights where it hasn't been, and it's not like it's hard getting into any European country with a Canadian passport. If anything it's caused me more hassle when I've used mine for just travel.
Work, live, study, etc; I'd say don't pass up the opportunity if you feel you can get the documents. Can open up all kinds of opportunities. Especially for your kids. Or it'll sit in a drawer and you're down the application fee and your time.
US passport is over rated unless you actually want to live there. It's nice to be allowed to vote and have the option to move there, but the FBAR and tax filing obligation sucks balls. I've never been able to find any good software that is fit for purpose for foreign income and no US local income, so generally most people either pay an accountant (quite expensive - $400 per year for a medium complexity return) or do them by hand. I ended up investing a lot of time into learning how to do them about 10 years ago so now i can do them by hand pretty easily every year, but it's definitely an annoyance i wish i didn't have in my life especially since i don't plan on moving there any time soon.
With my British passport I stayed in the EU for a year and a half without worrying about visa runs, that was convenient.
Also there were many discounts available to EU residents that were not available to me as a Canadian. Train tickets most importantly, the EURail unlimited ticket was like more than 50% cheaper if I recall correctly (when that's saving you 700 euros it's pretty significant).

Yeah I did a couple years kicking around, and a bunch of multi-months stints with contract work I wouldn't have gotten without a passport.
