Worth noting that in the kitchen layout I've seen from @benyl the 60" of fridge/freezer are mostly "out of sight" given your large butler's kitchen behind the main elevation with range&cabinetry. I think that gives you more freedom to consume a lot of space without it commandeering the room.

Okay things are coming together with the architect.
My priorities on new layout for this round.
1. bigger more accessible deck
2. More space in terms of kitchen storage/pantry.
The architect had the idea to move the entire kitchen into the current living room. It hadn't occurred to me before, but I ended up loving the idea. We can also move some walls and create a better laundry room and a butler pantry while we are at it.
My problem now is figuring out what the hell to do with the formal dining area. We barely use it right now, and nobody wants to eat in there when we have a nice view of the lake at the other dining area.
I'm thinking of a climate controlled wine room. What say you, beyond? What would you do with the area? The front living room area is open to the upper floor, but the formal dining area is not. Above it is an open study/library that has a balcony overlooking the front living room.

This is my modifications to his suggestion: expanded butler pantry with smaller laundry. He put a study in the formal dining area, but I'm thinking some sort of climate controlled win storage, with a bar stool or wine tasting area. Maybe a see through fireplace to the new living room area (former kitchen).
Wine room is terrible. Smoking cigars at comfortable room temp is awesome.
You barely drink wine, anyways, do you? Taking that step will lead you down a dangerous path of pretentious, pseudo-sommelier, wand-gobbleness. Don't make 2022 the year you start posting like... a person who posts like that.
Personally, I'd keep the office / den.. cause wfh could be here for good. You might be able to make a wine wall for the space between the living room and office, or a couple nice chairs with a bar along the back. Have seen a few pictures where they open up under the stairs for a wine cellar

It's going to be a study. I've got three kids going through high school in the next ten years and I'd like them to be able to site somewhere other than in their rooms to do homework. I think I want it to stay mostly open, though.
Wine walls make me thing of "fast casual" restaurants like earls. Terrible way to store good wine, and a great way to show sure you value quantity over quality.

Getting rid of the dinning room is fine. We never used ours. Rebuild isn’t getting one.

I respectfully disagree with upstairs laundry. I have it and I'd honestly rather have a partially "finished" utility room and cram those machines in there. When the washing machine blows its diaper (not if because it's a #Eco appliance) the "floor drain" in the upstairs laundry room is not going to stop you from a $10k bill or shitty insurance claim.
Also, stackable machines that aren't stacked is like pizza cutters on a muscle car.

Upstairs laundry isn’t for me. You have a tub, I have an upstairs laundry.
As for leakage, mitigation strategies are being conceived. I currently planning for floor drains hidden behind / beside the toilets for the inevitable “flood” when my son or daughter uses too much toilet paper and continues to flush and flush. The traps get fed water from the shower so that you don’t have to worry about sewer gasses.
