We contemplated 10’ ceilings. It makes the most sense if your neighbours houses match. Don’t build the most expensive house on the block. We did it in Aspen (built the most expensive house in our cul-de-sac), but we did it for us and the time we lived there. It didn’t do much for resale as the plebs who bought our house didn’t appreciate the subtle upgrades.
We are making the same “mistakes” again with our rebuild. But again, I am building it for me and my family, not for the next guy.
If you want 10’ ceilings, do it because you want it and because you think it is worth it.
I am going to pay extra for them to run the HVAC through the trusses, because I don’t want a bulk head in the basement. Will the next buyer notice? No fucking way. Most people never notice the subtle things.

Then bigger question for me is what are you going to do with the doors. Having high ceilings looks great unless you still use a standard height door with it. Keep the scale of the doors to match the height of the ceiling.

I'm already at 8' doors on the main, and I won't have a ton of upper cabinetry save for the pantry and maybe 5-8' of wall cabinets

I don't think it looks unbalanced. (Edit: Looking at my picture, they kinda do. But when you are in the kitchen, you don't. They just look a little... grander. We barely use the top cabinets though. 10' ceilings aren't going to look weird if your house is designed around that fact. Obviously if you used doors/windows/cabinets destined for a 7 or 8' ceiling home it would look weird, but I would think anyone going 10' is going to be aware of that when designing the rest of the home. In our place, just about every single wall is broken up by some sort of feature whether it be windows, glass, shelving, or a cabinet so there is nowhere that has just a huge blank wall from floor to ceiling. That seemed to be the case in most of the places we looked at.
