In reality, most people will get home from work and plug-in during peak electricity hours. Unless there's variable pricing and incentives to charge overnight, it will just add to demand during peak evening hours.

The grid could be made smart, but the car can also be made smart.
Say, you come home at 5pm and the car is still at 70% charge. The car can be programmed to know that its mostly full, and only turn on charging at the exact few non-peak hours it needs to get to 90%, and then slow trickle topoff until sunrise. If you want to go out for the evening, just say "Google / Alexa I'm heading out later" or a simple thumb button on the handle and it will do a normal charge immediately as you plug it in.
It can even be tailored to each individual city, where the car knows what hours are minimal demand for that city, and will draw maximum power on those hours. its not exactly the same for everywhere afterall.
