We are looking to build a double detached garage next year. Should be a fairly straight forward project except we are on an uphill so there'll be excavation and retaining wall required.

Any recommendations on who we should reach out to for quotes and conversations?

All, good. I'm going to go out on a limb and say 50% of the people you contact won't even give you a quote. So first step is to get any reputable company to give a quote.
Worth calling Gecko ( https://geckoprojects.ca/home ) I think to add to your mix of quotes.

If it was me, I'd aim to have my contractor selected and contract signed before January, to get at the front of the lineup for next season.

Yeah, definitely try and line it up quickly. When I got quotes last year from Star building materials they said some items like a 17x7 garage door is 3-4 month lead time currently. But they had 18x8 in stock so depends what you want to build. Best bet is to get it lined up sooner rather than later.
