Viscosity. The 10w30 will be thicker on average than the 5w30.
for winter you want a lower viscosity so oil can get to your engine faster in cold weather.

My old 320 uses 20w50, and 10w40 in the winter. Crazy thick stuff.

Don't use 10w30 in the winter.... and NEVER use 10w30 on your Acura
