Escrow services are the most secure method of payment. Basically, you give the money to be held in trust, and they release it to the seller when you receive the product. If you don't receive it, the seller doesn't get the funds. Lawyers do this all the time. When you buy a house, the lawyer receives the funds "in trust" from the bank, which they then release to the seller when you get title on the property.

Make bloody sure it's a REAL escrow service. Lots of scammers say "Hey, let's be secure and use ABC escrow" but what you don't know is ABC Escrow is fake and owned by his partner.
I don't use Ebay so I can't tell you good ones to use, but start with www.escrow.com
