    Default Bar deep fry vs Home deep fry

    Bar deep fry allways seems to taste different from home deep fry. Personally I think it is because of the type of oil used. But may be the temp, or something else I am unaware of.
    If it is the oil that is the difference. Does anyone know what bars use ? And where you can buy it ?

    at the bar i work at we use Shortening in our deep fryers @ probably 180 degrees

    Most places use canola oil. The taste is probably from all the other crap that gets cooked in them.

    No not 2" in a pan, I acctually have a deep fryer with the basket etc. about 3 inches deep with the basket but 5" to the real bottom of the fryer. Not much of a mess as the fryer has a lid on it with a little window and you can drop the basket with the lid closed.

    But thanks for the info. Guess I have been using the wrong oil.

    Dont forget, restaraunts dont normally have clean oil, it is filtered once a day, but otherwise, is very dirty. Thats where the "flavor" is coming from. lol

    Thats the answer right there. In the bar, they deep fry anything and everything.

    well, it is filtered once per day at least, and changed every couple of days.

    stuff deep fryed in fresh oil is nasty... the flavour comes from used oil... not dirty nasty, but not brand new fresh oil either.

    Its mostly all due to temperature, but some has to do with the oil...but its all temp...

    Picked up a 20L of shortening from costco. Definatly cooks differently then canola oil. And is allot cheaper.
    P.S. Deep fried perogies and bacon.... is great.

    I never do.... but I might try now. I dont think it will prevent them from leaking a little. But they are WAY better then boiled or pan fried.

    Has anyone else tried deep fry bacon ?

    i thought u just might pierce them, cause the cookin in the oil might make them expand and burst in the oil
