Why do a lot of engines have 3 or 5 valves/cylinder? How does this work? Which gets the extra valve, intake or exhaust? Just seems kinda weird to me to have more flow on one end than the other

Our 3.2L Benz engines (320 and supercharged 32) have a 3 valve system... 2 intake, one exhaust. It's supposed to be better for emissions or something.
